Never keep at 4oC in the refrigerator! According to Dr. George Greene, an emeritus associate professor of pomology at Penn State University, from the time peaches are picked and shipped to the time they are sold and taken home, they should be kept out of "the killing zone." This is a temperature range from 36 to 50 degrees Fahrenheit (2-10oC) which can injure the fruit. The worst temperature of all is around 40F (4.5oC) -- which can occur in a truck hauling peaches across the country or in a grocery store cooler. It also can happen in your home refrigerator. If peaches are stored for more than a day or two at "killing zone" temperatures, they will develop a condition called "wooliness".
